By Jove, I Think I’ve Done It

After 4 1/2 years of blogging,  I think I finally have the look I’ve wanted all this time.   As far as I know, it looks great in a few browsers, so if there are any troubles, let me know.  Otherwise, there are just a few minor tweaks that I’ll be making in the weeks to come, but I think I’m really, really happy with this look.

But you didn’t drop in to discuss the look of my blog did you?  How about a quick bread?  This quick bread is one of the more interesting ones that I’ve made.  What makes it so interesting is that it is a savory quick bread.   In fact, there isn’t even a little bit of sugar in it!  I made it a few weeks ago to accompany a pot of soup, and just plain forgot to talk about it.  I really enjoyed it- it was great smeared with butter, and really made the perfect soup accompaniment.  The kids really hated it, so I guess your results may vary.  Where I think this really would have been spectacular would be to take a slice or two and toast them up, add a smear of your favorite cream cheese and you’d have an incredible breakfast.

This bread comes together quickly, bakes fairly quickly, and is probably best served warm- but give it a little while to cool, or you will have trouble slicing it.  I wouldn’t hesitate to make this for company, and you could change this up so easily by adding some fresh herbs to compliment whatever you are serving.  Add some rosemary and serve with ham and bean soup, or add some dill and serve with a noodle casserole.  Add a bit of parsley and thyme and it would be amazing with a beef stew, or a bit of fresh sage to accompany a turkey breast.  I think the possibilities are endless, and just thinking about this bread makes me want some.

One note about the ingredients- specifically the minced onion at the end.  I couldn’t decide if this recipe was calling for the dried, minced onion flakes, or fresh minced onion.  I decided to mince up some fresh onion, and I think it added a fantastic flavor, so I would do that again.

Buttermilk Cheese Loaf

1 cup all-purpose flour
1 cup whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons dry mustard
1 teaspoon salt
1 cup grated cheddar cheese
1 cup buttermilk
1/4 cup oil
2 eggs
2 tablespoons minced onion

Directions:

Preheat oven to 375ºF.  Spray a loaf pan with cooking spray.

Combine flours, baking powder, soda, mustard, salt and cheese.  Beat together buttermilk, oil, eggs and onion.  Add the wet mixture to the dry mixture and mix just until combined.

Pour into greased loaf pan and bake at 375ºF for 45-50 minutes, or until a tester inserted near the center comes out clean.  Cool for 10 minutes before unmolding from the pan.
