Weekly Meal Plan 9/28-10/4

Did you know that Menu Planning was a weekly blog event?  Laura at I’m An Organizing Junkie has organized an entire event on weekly menu planning. What a fantastic idea and what a great source of inspiration! There are over 100 blogs linked to her- surely that’s a great place to find inspiration! Be sure and head over to Menu Plan Monday to check out all the meal-planning inspiration!

Another fairly basic week here.  I am glad to be back into a cooking routine after the summer of toss-togethers and salads.  In the coming weeks here I also hope to start breaking down some of my meal plans cost-wise and putting together a few weeks of budget plans.  I’m sure we all could use that from time to time!

Sunday: Poor Man’s Steak, Cauliflower and Egg Noodle Casserole

Monday: Frittata, Applesauce, Sauteed Chard

Tuesday: Simple Clam Chowder, Homemade Honey-Wheat Bread Woops, I forgot we have a friend dance night-we’ll be going out for pizza and bumping this to another week.

Wednesday: Apple-Cheddar Turkey Meatballs, Spinach Salad, Egg Noodles

Thursday: Honey-Pecan Crusted Chicken, Spinach Salad, Creamy Rice, Apple Crisp

Friday: Lazy Lasagna, Garlic Bread, Spinach Salad

Saturday: Out to dinner

**Lol, edited on Friday because I just realized that I totally deviated from the weekly meal plan.  I’m not sure how that happened… how did I go from planning goulash to making turkey meatballs?  And how did burrito night turn into Honey-Pecan chicken?  No clue, but there it is.

The cauliflower and egg noodle casserole looks really interesting! I know what you mean, I’m looking forward to routine too after throwing stuff together all summer!

Audra, I ended up not making the casserole and just roasted the cauliflower. But I still want to try the casserole sometime-it’s in my Amish cookbook, basically cauliflower, egg noodles, seasoning and a bechamel topped with crumbs. I think. :-)
