Weekly Meal Plan, Oct.4 thru Oct.11

I have to say that I am digging Menu Plan Monday.  It really got me into gear this morning and forced me to plan away.  Thank goodness for that, as it keeps me on track.  This is an easy week for me, shopping wise.  This is kind of a pantry week, not for any specific reason, other than I’m not feeling like thinking too hard about a menu this week.  This coming weekend’s meals are kind of up in the air.  We have birthday parties to attend on both Saturday and Sunday, so that kind of throws a wrench in the meal plan.  I may have something on standby to toss in the crock pot- most likely the recent Tex Mex Chicken with Beans that we all enjoyed. I also have a few things up my sleeve that are not on the menu plan.  We’ll see how that goes.

Sunday: Beefy Italian Soup, Cornbread Muffins, cheese and crackers

Monday: German Apple Pancakes, Natural bacon, berries

Tuesday: Leftover Italian Soup, Oatmeal Dinner Rolls

Wednesday: Honey-Ginger Chicken Bites, Jasmine rice, Broccoli

Thursday: Rotini and Cheese with Broccoli and Ham, Salad

Friday: Salmon Chowder, Rustic Hearth Bread, Fruit

Saturday: Up in the air
