I have a couple of up-in-the-air days this week. The first is Tuesday. I want to do soup later in the week, so I’m thinking I want to find a crock-pot pasta to make for Tuesday while we’re gone. Hopefully I’ll have luck finding what I want. Friday is tentatively scheduled for Salmon Chowder. I keep meaning to make that, and this seems like a good week to do it, but it’s going to depend on two things- one, whether or not I get around to making some hearth bread to go with it. And two, whether or not I actually make the sopa de conchitas on Thursday. That’s a soup that we recently had at a friend’s house. It’s extremely simple to make, but the best part is that it’s one of those Mexican condiment soups. You pile it full of beans, cheese, cilantro, salsa, sour cream and you end up with a big bowl of yum. I’m trying to re-create it using ingredients the kids like, so we’ll see if I get around to that this week.
Other than that, it’s kind of low-key here this week. Andy’s work schedule is changing up, so he might be around more this week, or he might not. It’s day to day now whether he’ll be around or out of town. Abigail has a touch of a bug this week, so hopefully we can keep that from spreading to everyone else. Oh! And there’s some recipe testing to do. I have a few veggie dishes to try out for next week’s Thanksgiving dinner, I’m really hopeful that they’ll turn out.
