We have some leftovers to use up yet, so part of this week is going to be utilizing the leftovers. After that, I suspect we’ll have had enough turkey, so the rest of the week will be poultry-less. The pasta in the crock-pot for Tuesday nights just hasn’t been working out the best. I tend to add extra pasta, and then it ends up a tad dry, so I think we’ll go back to soup for our Tuesday night crock-pot dinner. Wednesday nights have turned into an early dinner night, as we are finding ourselves busy after the dinner hour, so Wednesday night is looking to be an easy night around here for a while. The Asian Orange Beef is a new recipe from this month’s Healthy Cooking magazine. The fried rice will be made from leftover baked rice the day before- I think that will work very well. Saturday we have a birthday party to go to, and I also will have Abigail at Nutcracker practice, so I’ll have a pot of chili on for either lunch or dinner, depending how the day goes. I’ve been eyeing up a green chili, but I know the kids will eat the red version, so it may end up just being that.
Sunday: Double Berry Pancakes
Monday: Creamy Turkey Baked Ziti, Chopped Salad, Fresh Fruit
Tuesday: Turkey and Wild Rice Soup, Fresh Bread
Wednesday: Pizza Night, Fresh Pineapple
Thursday: Smothered Pork Chops, Easy Baked Rice, Carrots
Friday: Asian Orange Beef, Fried Rice, Egg Rolls?
Saturday: Chili Day, either green or red chili , corn muffins.
