This was one of the best things I ever did.
Last summer, at the height of tomato season, I found myself running short of time. I didn’t have time to process tomatoes, and I didn’t have enough to really can or make salsa with. I didn’t want them to rot away on me, so I cored them, washed them, dried them, and popped them in a freezer bag. Into the freezer they went…
And several months later I find myself pulling out frozen tomatoes every once in a while, instead of opening a jar or a can, and I cannot tell you how wonderful they are! I put the frozen orbs of tomato in a bowl to thaw, and once they thaw the peel slips right off. Then I coarsely chop the tomato (or run it through with kitchen shears) and right there I have tomatoes in their own juice for adding to soups, stews and chilies.
These tomatoes are fantastic! And provided I have the space in the freezer, this will be how I always preserve my tomatoes. It’s waaaaay faster than canning them, and just so easy to not do again. I love it!
