Last week as I was assembling cookie recipes and ingredients for this week’s baking spree, Abigail came to me with a picture of a Whoopie Pie and asked if I could make something like it. Oh my, yes, yes I could! I recall making Whoopie Pies once before, and they turned out okay, but the filling recipe had used shortening, and after eating a few of them, the bulk of them went into the garbage. It’s been long enough since that happened that the kids don’t even remember them. So I went in search of a recipe, my only requirement being that the filling NOT include shortening.
I ended up with a recipe from Allrecipes.com, and what sold me on the recipe was the marshmallow creme in the filling. Chocolate cakey cookie with marshmallow goo in the middle? I’m all over that!
The Whoopie Pies turned out fantastic. The whole family loves them, Zander especially. The chocolate cookies are light in flavor- these don’t knock you over the head with chocolate. But they are nice. They’re very nice, and while they’ll be going on our Christmas cookie platter this year, I suspect they’ll be visiting us a few times in the year ahead.
This recipe made me 51 assembled Whoopie Pies. I used my teaspoon cookie scoop to measure each cookie- so that was a lot of cookie baking! Definitely spray the sheets with cooking spray between each batch. My cookies took 7 minutes per batch to bake, so they did bake up rather quickly. A warning about the filling: the marshmallow creme did not want to fold nicely into the frosting. Just beat the snot out of it, and it will eventually come together and your filling will be luscious and tasty.

Whoopie Pies
1 cup butter or margarine, softened 1 1/2 cups sugar 2 teaspoons vanilla extract 2 eggs 4 cups all-purpose flour 3/4 cup baking cocoa 1/2 teaspoon salt 2 teaspoons baking soda 1 cup water 1 cup buttermilk FILLING: 2 cups marshmallow creme 2 cups confectioners’ sugar 1/2 cup butter or margarine, softened 2 teaspoons vanilla extractDirections:
In a mixing bowl, beat butter, sugar, vanilla and eggs until well mixed.
Combine dry ingredients; add to butter mixture alternately with water and buttermilk. Drop by teaspoonfuls onto greased baking sheets.
Bake at 375 degrees F for 5-7 minutes or until done.
Cool completely.
In a small mixing bowl, beat filling ingredients until fluffy. Spread filling on half of the cookies, then top with remaining cookies.
