It’s slowly getting there around here. We’re in the home stretch of the first week of our new schedule, and I think it won’t take too long to figure things out. If I have it figured out right, we’ll have two meals a week that we take with us, three meals normally at home, with plenty of time to cook them, and then two meals that either need to be crock-pot or made-ahead with few steps to completion when we arrive back home.
Yikes. I’ve been very busy looking for inspiration this week. Our take-along meals last year were just one day a week, and it seemed like we were always going back and forth between calzones and pasta. Boring to have over and over. And my biggest go-to for being ready and waiting is taco night. Always a good option, but every week?
So I’m in the process of trying (trying, I tell you) to compile some kind of meal organization. I may add a few categories to my Recipe Trove for just this purpose. Something like “Take-Along” that either reheats nicely in the microwave or doesn’t even need reheating. And then a category of “Ready-When-You-Are” that can be totally made ahead and left in the fridge or crockpot for a few hours.
I’ll figure it out, I promise. And on top of that, I think I’ve also finally figured out how to mobile blog. The sticky widget in doing so has always been my photos- I just wasn’t figuring out a good way to store them online and be able to access them easily for my blog posts. Silly me, apparently I can do that right here with WordPress. If I can mobile blog, that guarantees me time to blog post four days a week while I watch my babies dance. This is spectacular news, my friends!
Tonight is one of those taco nights, but have you ever had tacos and then had leftovers- but not really enough for a full meal for the family? Tomorrow I’ll share a new way to re-invent those taco leftovers that actually got both of my kids eating well.
