Holy popcorn, Batman, this is a good one. This is a REALLY good one. Caramel Corn is just not something I make very often, which I always chastise myself about when I actually do make it, because it’s way easier than I remember every single time. This time, I decided to make some for a bake sale, only I decided to add a twist that knocked my socks off. It was so easy, I don’t know why it didn’t occur to me before.
So first, you need a batch of homemade caramel corn. I happen to have a great recipe right here for you. When you pop up your popcorn, just make sure you sift through and leave the little gnarly bits behind in the popcorn bowl. Big, fluffy kernels make the best caramel corn.
Now, once you have your caramel popcorn baked and out of the oven. You’ll need to gather three extra ingredients. You will need a box of Golden Grahams, a package of mini marshmallows, and a package of chocolate chips that has been melted. In this case, I used milk chocolate, which worked fine, but the next time I make this I want to use Hershey’s Special Dark chips. I think dark chocolate would have been the better choice.
From there, it’s a piece of cake. Sprinkle those Golden Grahams all over the caramel corn. You can kind of toss it in a little bit- just be careful if your corn is still a bit warm. Then follow suit with the mini marshmallows. Eyeball your ideal amount, you want a nice ratio of caramel corn to Golden Grahams to marshmallow. Finally, grab that meted chocolate and drizzle it all over. Do your best to allow the chocolate to set up before you start digging into the caramel corn. Well, try anyway.
This really is spectacular. It tastes amazing- the flavors are all perfect together, and I thought it made a great addition to the bake sale. This would be great to have on the table for a fall-themed party too. S’mores Caramel Corn. This is a delicious thing.
