I’ve been meaning to share this recipe, because it’s really very simple. It utilizes pantry basics, and you can play around with it however you see fit. Growing up, on the rare occasion we would have fish, one of the ways Mom would prepare it was to take the fillets and sprinkle them with crushed Stove Top stuffing. Then a drizzle of butter would go on the fish, and off they went into the oven. It’s still one of my favorite ways to eat fish, plus it’s a three ingredient entree. Fish, Stove Top, and butter. All the seasoning you could need is in the stuffing mixture.
Today’s fish is in that vein of sprinkle and drizzle. Lacking packages stuffing mix, I looked in the pantry and debated amongst various crackers, cereals, and crumbs before settling on the whole wheat saltine crackers. I took out 15 crackers and crushed them up. Next I added lemon pepper, sea salt, and a small handful of chopped parsley. I laid my fish fillets (haddock in this case) on a baking sheet that had been sprayed with cooking spray. Looking through the fridge, I found I was out of lemons, but no worries! I cut an orange in half and drizzled my fillets with freshly squeezed orange this. On top of this, a generous sprinkling of my seasoned cracker crumbs. And then finally, a drizzle of heart-healthy olive oil. They baked for about 15 minutes and dinner was done. Simple, tasty, and really, all it needed was some colorful vegetables on the side.

Simple Baked Fish
8-12 fillets of fish (haddock, pollock, cod, tilapia) juice of 1/2 an orange 15 whole wheat saltine crackers, crushed3/4 teaspoon lemon pepper 3/4 teaspoon sea salt 2 tablespoons freshly chopped parsley 2 teaspoons olive oil
Preheat oven to 375ºF. Spray a large baking sheet with cooking spray. Lay fish fillets on baking sheet and drizzle with orange juice.
In a small bowl, combine the crushed crackers, lemon pepper, sea salt and parsley. Toss to combine. Sprinkle crumb mixture liberally on top of fish fillets. Drizzle with olive oil and put the pan in the oven.
Bake for 10-15 minutes, or until the fish flakes easily with a fork. Serve immediately.
