Do you ever have one of those moments where you’re just wanting something different? Maybe you’re making a favorite dish, but you wish there was a simple tweak you could do to make it slightly different this time. I have just the solution for you.
I’ve been enjoying eating up a handful of avocados we’ve had lying around since the Super Bowl. One of my favorite ways to eat them is sliced up in a tortilla with melted cheese, sour cream, and plenty of veggies. Last Friday I was making this very thing when I decided to add some green onions to the mix. As I washed and trimmed two onions, I fondly remembered our grilled green onions last fall, and wondered if it would work to toss them in a skillet for a little while.
So I did just that. I gave them a drizzle of olive oil and browned them in a saute pan. Let me tell you, there is something magical about adding heat to scallions! I added them to my wrap and it was the best avocado wrap I’ve ever had. The onions were so delicious, I could have eaten them all by themselves.
The possibilities here are really endless, I mean, what couldn’t you add some caramelized scallion to? Well, maybe not breakfast cereal, I suppose, but I’m thinking even a simple tossed green salad, with some charred scallion thrown on top, omg. Try it, you’ll be hooked, and obsessed with the green onions.
That looks great! I really like making a simple salsa with diced avocado, halved cherry tomatoes, charred green onions, lime juice, and S&P. The charred or grilled onions really do add a nice touch.
