We’ve been in a bit of a rut this summer as far as food goes.  The weather has just been…well, different, so the usual parade of grill fare just hasn’t been making the rounds.  Usually in the summer, the kitchen takes more time off, but since we haven’t had the heat here, the kitchen’s just kept of churning out the meals.  However, days of play and relaxation have kept us parading through the usual pasta/pizza/taco nights.  Quite honestly, it’s getting a little boring.

I changed it up the other night by making up some turkey burgers, and thought about simply doing a salad and some fruit to go with, when I decided I didn’t want that, what I really wanted was French Fries.  Those I don’t make at home, but I do, from time to time, make some really easy Potato Wedges.  It had been a long while since I made a side of wedges to go with a sandwich, and when the kids saw what I was making, they were all too excited to wait impatiently for them to be done so we could sample.  However, these were not my normal potato wedges, these were a new variety of Ranch Potato Wedges that I found over at Heavenly Homemakers.  Laura has been diligently assembling five-ingredient recipes that are very tasty, and not just quick and easy.

These particular potato wedges utilized a packet of ranch salad dressing mix and some mayo.   I happen to have been using an olive oil mayo lately, so I used that for the potato wedges.  They couldn’t have been easier!  Mix the dressing mix with some mayo, and then toss the potatoes in the mixture.  Spread them out on a baking sheet, and voila, bake and eat.  These wedges were delicious!  The ranch flavor came through very nicely, and the wedges had a nice crispy crust from the mayo.  There wasn’t a single wedge left when dinner was done, we all enjoyed them quite a bit.  I don’t know that they will totally replace the plain old wedges, but it sure is a great way to change them up a little bit.
