The second bar I made up to take with us this past weekend was a Scotcheroo.  This is one of those bars that I’ve never made, but gosh, do I love to eat them.  When I see them at potlucks and other gatherings, I always reach for this delicious delight- it’s one of my favorites.  And yet, I’ve never made them.  So I remedied that and dug around for recipes.

This was an interesting research project because I honestly wasn’t sure what they were called.  Searching for “butterscotchy, peanut buttery krispie treat with chocolate on top” give you many, many things.  I found a recipe eventually for something called a Scotcheroo, and it was exactly what I was looking for.

These bars actually originated in my part of the country.  The version called K-Bar is called that because it is usually made with Special K cereal.  The Scotcheroo is made with Rice Krispies- very similar, but still slightly different.

Which we discovered when my mom made the K-Bar version and brought it along this weekend!  Great minds think alike! And while they were very similar, they were still different, and I wish I’d thought to have some fun and sit down and compare the two side by side.

I have one note about making these no-bake bars, and that is with regards to cooking the sugar and corn syrup together.  You want to do this step ONLY until the sugar is melted and incorporated into the corn syrup.  If you cook them together too long, this creates a really chewy bar that can be hard to eat.  Just until melted together, and you’ll have a delicious bar that makes everyone happy.

Scotcheroos

1 cup light corn syrup
1 cup sugar
1 cup creamy peanut butter
6 cups Rice Krispies cereal
1 cup semi-sweet chocolate chips
1 cup butterscotch chips

Directions:

Lightly grease a 9×13 pan and set aside.  (Or line with non-stick foil.)

In a saucepan over medium heat, combine the corn syrup and sugar.  Stir constantly and just bring to a boil.  As soon as the sugar is completely melted and incorporated into the corn syrup, remove it from the heat- no need to bring to a complete boil unless they are not combining quickly.

Stir the peanut butter into the corn syrup mixture and then pour this into a bowl of Rice Krispies.  Stir until evenly coated and spread into the prepared pan.

Combine the chocolate chips and butterscotch chips in a small saucepan and melt together.  Once melted, spread evenly over the cereal mixture.

Cool completely before cutting into bars.
