I don’t know what to call these things.
I found them at Pioneer Woman’s Tasty Kitchen website- were there are so many drool-worthy recipes, it’s hard to pick just one. They were called Kit Kat Bars, and based on the title alone, I had to make them. But when I looked at the ingredients and saw I needed Club crackers and graham crackers, I was so intrigued, there was no way I was not making them. And what better than to take a pan of untried bars to a family gathering- a willing crowd of guinea pigs, that’s for sure.
I made the bars the day before heading out to visit family. They really did come together much more easily than I’d anticipated. I used a half-sheet pan instead of a 9×13, I wanted plenty, so I multiplied everything by half and used that for my measurements. (So instead of 2/3 cup I used 1 cup, instead of 1/2 cup, I used 3/4 cup.) The first layer was a layer of club crackers, followed by a layer of the brown sugar/graham cracker goo. After repeating this twice, chocolate chips, butterscotch chips and peanut butter are combined to provide a topping for the whole thing.
I teased everyone all weekend about these delicious homemade kit kat bars, and when I finally brought them out to try them, I have to admit, I was disappointed. Oh, they are very tasty- quite delicious and addictive, but they taste nothing like a Kit Kat. The salty Club crackers tame the sweetness of the sugar and the chocolate, and just make you want to keep coming back for more. I will most definitely be making these again, but for now, I think I’ll go with Two-Cracker Party Bars as a name.
Two-Cracker Party Bars
2 sticks Butter ½ cups Milk 1 cup Brown Sugar ½ cups White Sugar 2 cups Graham Cracker Crumbs 1 box (16 Oz. Box) Club Crackers 1 cup Chocolate Chips 1 cup Butterscotch Chips 2/3 cups Peanut Butter Directions:Melt butter in a medium saucepan. Add milk, brown sugar, and white sugar. Bring that to a boil and add graham cracker crumbs. Reduce heat to low and cook for 5-6 minutes.
Put a layer of Club crackers on the bottom of a 9 x 13 pan. Pour half of the graham cracker mixture over that. Add another layer of crackers, then the other half of the graham cracker mix, followed by a third layer of crackers.
Melt chocolate chips, butterscotch chips, and peanut butter. Use to frost the bars by spreading it evenly over the top layer. Chill. Cut. Enjoy!
I made something very similar a few years ago and they were called Twix Bars. While the flavor was reminiscent, I too remember being a bit disappointed that it wasn’t more Twix-y. Still good though! 🙂
Isn’t it amazing how the name simply changes your expectations? I would still love to find a fun homemade bar version of a Kit-Kat, but all the recipes I’ve found are similar to this one. Maybe one I need to play around with.
