After that disappointing curry, I seem to have lost a bit of steam. I may be a little more cautious in the near future about selecting recipes to try. I really hate it when something doesn’t turn out! I had a lot to get done yesterday so lunchtime was simply leftover falafel. Again, it was very good, although it wasn’t as good as the ones fresh out of the oil. I also noted to myself, as the day went on and I didn’t get hungry, that it was also very satisfying and had staying power. I love that-keeps me from snacking in the afternoon when the snack demon usually strikes.
Last night for dinner the kids asked for pizza. Again. The other night we had assembled pizzas together using pita bread for our crusts. It made perfect personal-size pizzas, and since they were homemade the topping ideas were pretty limitless. I checked my pita supply, found two remaining pieces, so the kids got their pizzas for dinner. With no pita to make a pizza for myself, I decided that a frittata would do nicely. It would help me to finish clearing the fridge of some vegetables, and give me a satisfying dinner accompanied by the remaining sweet potatoes and a really fresh and ripe pineapple. I tossed in some mushrooms and peppers, a few cheeses and seasonings, and then decided to add some fresh parsley and chives. For being so simple and basic it was the perfect dinner for one. I need to remember though to spray the pan… I ended up eating something that resembled a scramble because the eggs stuck to the pan.
I have no idea what the day ahead is going to bring. This weekend is Abigail’s dance recital, and since she is in two classes, we have twice as much running to do. For sure I’ll be sharing some photos of the dancing princess, but meal-wise, I really don’t know what we’ll be doing. It looks like the rain is done for awhile, so maybe today I’ll get the rest of the seeds planted in the garden.
