This dip today is so delicious and so addictive, that I want to warn you right up front to make this for a crowd. Otherwise, you will find yourself standing over the bowl eating bite after bite, and it will become so addictive that you will chase off your significant other with a sharp instrument.
Really, it’s that good.
I made this dip for the wedding I helped with just over a week ago, only instead of serving it up as a bowl of dip, I topped crispy sesame crackers with the dip, followed by a sprinkling of bacon. All of the flavors combine perfectly in this dip to give you just enough salty, just enough creamy, just enough crunchy, and just enough sweet. The only thing I left out was the lettuce, because I didn’t want it to go limp and soggy. Really though? I think I missed the slight flavor the lettuce would have brought to the party. Next time, I’ll add a few shreds of crispy romaine and see how it fares. Oh, and there will be a next time.
Fantastic BLT Dip
1 cup sour cream 4 ounces cream cheese, softened 1/2 cup mayonnaise (do not use Miracle Whip) 1/2 cup finely shredded sharp cheddar cheese 1/2 teaspoon garlic powder 1/4 teaspoon fresh black pepper 1/4 cup finely chopped yellow onion 1/2 cup finely chopped green or red bell pepper 2 cups cherry and pear tomatoes, cut into quarters 1 pound of bacon, cooked, drained and crumbled 1 cup finely shredded romaine lettuceDirections:
In a mixing bowl, combine the sour cream, cream cheese, mayonnaise, cheddar cheese, garlic powder and black pepper. Mix with a hand mixer on low speed until well mixed.
Fold in the onion, bell pepper, tomatoes, and about 2/3 of the bacon crumbles. Mix well.
Use the remaining bacon crumbles and the lettuce for garnish.
Serve with assorted crackers, chips, and veggies for dipping.
That sounds o-so-dangerous. It would be a fun topping to a potato soup too 🙂
err I also meant a baked potato – but either way, it would be good 🙂

sounds/looks like you could make it into a seven-layer salad type of dip if you added lettuce…
