Do You Want An Updated Green Bean Casserole?

Yesterday I spent my time assembling the green bean casserole that was in the December issue of Eating Well.  I really like that magazine, and so I had high hopes for the casserole being scrumptious and all…

I didn’t have any of the requisite ingredients, so I went to the store and picked up what I needed.  All told, including the dried buttermilk powder, I spent just over $20 on ingredients for one casserole.  The bonus was if it turned out, the only thing I would need to remake it was the mushrooms and beans.  It didn’t take too terribly long for the casserole to come together, and then I let it sit on the counter while I assembled a meatloaf and scrubbed some potatoes for baking.   It only took about 20 minutes for the casserole to bake up, and I waited impatiently for it to sit for the recommended five minutes.

I took three bites.  And the third was just to make sure that it was as bad as it seemed.  It had the texture of paste, with strings in it.  And despite the ton of mushrooms and onions inside, the flavors did not come through.  Nor did the onions on top contribute anything.

Andy took a few more bites than me, but came to the same conclusion after a while.  The whole mess went into the garbage.

The good news is that it totally got rid of any jonesing we had for green bean casserole.  Completely ruined that idea, so I’ll be coming up with something else green to accompany our turkey.   Plus, as I stared at this huge pan of casserole, I just saw the $$$ being flushed down the drain.  I could have spent less than five bucks on a can of cream of mushroom soup and a can of french fried onions and been happy.  Now I fear I have a bit of an aversion.

Take my advice, do not make this casserole.  If you really have a desire to make a green bean casserole without the can, then I insist you head on over to A Veggie Venture and make Alanna’s version.   When she says it’s the World’s Best Casserole, I tend to believe her.  Maybe by next year at this time, the idea of green bean casserole won’t give me the willies, and then I can try her version.

I think I need to make some cake today.
