Do you know of one? That actually tastes good? Last night I made an apple bread that had high reviews on a recipe site… okay, first of all, mixed as written, I ended up with something that was not a bread at all. It was dry and powdery- the liquid to dry ratio was off, so I mixed in 1/2 a cup of buttermilk, and that seemed to correct the problem. The batter smelled good, and the breads smelled fantastic while baking. After they cooled I wrapped them up to have this morning, certain they’d be tasty. Um. No. Not even. And I feel bad because I tucked a slice into Abigail’s lunch, so hopefully she just doesn’t get that far.
So I had this wonderful post all planned for this morning and my apple bread, and it is most definitely not this one. I’m on a quest now. I have printed out a few other apple quick bread recipes, and opened a few cookbooks. Hopefully I’ll be back a little later with a winner. In the meantime though, do you have a reliable apple quick bread recipe? Even a good muffin recipe would be welcome. I could have sworn I’d made a good one before, but apparently not…
This is not quite a quick bread but it is really good and works up fairly quick. I have done in in loaf pans and cup cake cups.
