Thank you everyone! Thanks for the comments here as well as the e-mails asking how I’m doing. That was very thoughtful, and really brightened my days. I’m still not fully healthy, but I am regaining energy and slowly (very slowly) returning to normal. I am amazed that I have lost an entire week. Completely. Poof! Just like that, one full week completely gone, and nothing to show for it. I hope that you all are able to manage to escape this year’s flu, because it’s particularly dreadful.
I woke up yesterday morning feeling much better than in days past. And while I did have to spend a good deal of my day snuggling with my son who has also become ill, I was in the mood to cook, and more importantly eat. Except that yesterday was Easter Sunday, and when was the last time any grocery shopping was done? Yikes! Living in rural Wisconsin, it’s not like I can just dash out to the quick-mart…we don’t have those here! When the one grocery store in town closes, you’re out of luck. However, I rummaged through the pantry and freezer and was able to cobble together some semblance of an Easter Dinner. Pot Roast, Crispy Potato Wedges, Hot Buttered Peas, Garden Pickles, and a loaf or two of Challah, I was thrilled with my efforts. For the first time in a week, food did not taste like sawdust or paste, and it just felt good to whisk and stir again. I’ll admit that kneading the bread dough just about sent me off for a nap, but I pulled through, and the week ahead is shining and bright with possibility.
But first, there is a fridge to clean out, and there must be grocery shopping of some kind. And I do have a little boy who needs tending to as well. All this to say I am feeling much better, and I hope to have a few things to share with you this week. Thank you for being patient with me and sticking around.
