Here’s how the week looks so far. I can’t remember the last time I actually stuck to a menu plan for the week, so we’ll see how we do. These are just the dinners this week.
Sunday: Homemade pizza
Monday: Black Bean and Pumpkin Chili
Tuesday: Beef and Broccoli Lo Mein, Pot Stickers
Wednesday: Rotini and Cheese with Broccoli and Ham
Thursday: Oven Baked Chicken Fingers (looking for a recipe)
Friday: Cheesy Stuffed Meatloaf. (Nope, haven’t tried it yet, maybe this will be the magic week.)
Saturday: Butter Chicken (unless it’s nice out, then something will be grilled instead)

It’s not too early to think about the weeks to come in this wonderful Thanksgiving month. What are you cooking in the weeks ahead? I want to avoid anything that could be on the Thanksgiving table- but since we’re celebrating Thanksgiving for 3 whole days this year, that could be a lot of food to avoid…
I was just searching for some Thai recipes, and other light tasting things I could make. I’m already a little over pumpkin for the year so I don’t want to over-do it before Thanksgiving!
So did you make the meat loaf yet? I’m really interested to see how that turns out. It looks so good. Like a giant stuff Italian meatball!!!
Lucky, that’s kind of what I’m trying to do. That, and I’m trying to save as much of the grocery budget for Thanksgiving as possible.
Belle, I didn’t yet. It got really good reviews by a few other people, so I expect it will be good. I need to remember to check the ingredients this week BEFORE I go shopping.
