Eggrolls are NOT a good take-along food item.  Boy, were they sad and mushy when reheated in the microwave.  🙁

I also had to laugh at myself after a conversation I had yesterday regarding these eggrolls.

The day I went shopping was not ideal, and when I got to the Asian aisle, there were literally only two packages of spring roll wrappers in the freezer there.  And they were not the wrappers I usually buy.  But I had planned for eggrolls, so I grabbed a pack and figured I would make do.

It wasn’t until yesterday when someone recommended to me that I buy my eggroll wrappers at one of the Asian markets in town.  Duh.  Talk about one of THOSE moments.  I pass by several of those markets Every. Single. Day.  I have yet to stop in one.  But I think this will change shortly.

Those eggrolls were so delicious fresh, and I want to play around with some garden produce in them.

Just don’t pop them in the microwave.  If you can’t eat them fresh out of the fryer, pop them in the oven to re-warm and re-crisp.
