I made last night’s dinner before coming down with a very sudden case of the flu. It was kind of creepy, sitting down at the computer, and all of the sudden getting the shivers, which of course led to a snowball effect with which I am currently enduring. Of course I have the flu, why would we want to be healthy here?

Anyway, last night’s dinner was another frugal one, and one well worth sharing. One of Abigail’s favorite dinners is Sloppy Joes, and that was last night’s choice. I’ve always just made them, throwing this and that into the pot and calling it dinner. But last night I wrote down the recipe, and was surprised to find out how little actually goes into that pot. I’ve always made sloppy joe meat from scratch, and it surprises me how many people reach for “that can” of sloppy joe mix, because I have to say, that stuff really isn’t very good. People always seem surprised that I make sloppy joes from scratch when I could just open a can and be done with it. Well, I insist that anyone can make homemade sloppy joes that will taste way better, and can be done very economically.

Budget wise, last night’s sloppy joe was actually a freebie for me. I used things from my pantry and freezer that I bought some time ago, and I made homemade buns to serve it on, so there was no expense for dinner. My recipe for Sloppy Joes is hanging out in the Recipe Trove- I promise that you can make it and everyone will love it.

  1. This sounds easy and good. My mom always made these from scratch too, but she called it “spanish hamburgers.” Thanks Erika.

  2. Sorry you feel crummy…flu does come on suddenly. I honestly hope and pray that my children do not like sloppy joes because I don’t plan on serving them at my house! Just don’t like them!

  3. I hope you feel better soon Erika. The flu is certainly no fun. You’re a trooper to even post today!
Take care of yourself and get lots of rest and plenty of fluids!

  4. Sorry to hear you’re under the weather; hope you’re on the mend quickly. I agree, I’ve never understood the sloppy-joe-in-a-can thing. I will admit that almost everything but the kitchen sink goes in mine, but it’s still simple, simple, simple! And with homemade buns–yum! That might have to go on next week’s menu here.

  5. Hope you’re feeling better soon! I had the flu once and it hit me like a truck. Like you said – one minute you’re fine, the next minute, shivering, achey, sore throat and all that fun stuff. Get some rest!

  6. Whew…

Belle, I was under the impression that spanish hamburger was a little different. I’ll have to check that out.

Claire I used to dislike sloppy joes as a kid. Apparantly I gre out of that one though.

Thanks Tammy, I’m finally on the mend.

Michelle, the homemade buns definitely take it over the top, but I do think I need to find a new bun recipe, this one seemed a little dense to me for sloppy joes.

Thanks Alysha, 4 days later and I’m finally seeing the light…
